    The veggie sides look delicious but like others I noted that the majority use Parmesan cheese which is quite high in sodium. Since most people should monitor their sodium intake and many need to restrict it, could you provide similar recipes that do not rely on Parmesan cheese?

      Laura, you can simply omit or reduce the amount of Parmesan cheese if you are watching your sodium intake. Hope that helps!

      As I am not an expert on food safety, I cannot really say with certainty – sorry! Methods for optimal food storage and shelf life should be based on good judgment and what you are personally comfortable with. Hope that helps, Sam!

      If cooled and placed in fridge within two hours 5-7 days. The reason for the range is because I don’t know your fridge. Commercial kitchens in Oregon can keep for seven days. Day one being the day it is cooked. Now one must realize there’s always a caveat. Is your fridge temperature at optimum temperature? So use your best judgement

I have been cooking a long time, but like others, I can think of many great main dishes when planning meals, but sometimes struggle with picking a side easily. You have such a yummy selection, and I am sure that I will at least make eight or ten of the ones you have presented, SOON!. The descriptions and photography surely add to my interest.

      i made a dish to take to church Christmas day that my gf said is a real hit. well, i dont like it sooo im looking at ur recipes for a quick last minute veg dish. i think the corn will work. Hope its good
      my other dish took me 3 hrs to make! i hate to throw all that work away!!

    Attempting to convince myself to introducing more vegetables to our daily meals, I Googled ‘easy/quick vegetable sides’..

    On the Google page, your site caught my eye immediately, as I have found saved and enjoyed previous dishes you have presented.. We are an older couple and I can come up with main dishes with little problem but, I always seem to fumble over sides… Especially healthy and quick sides..

    First, thanks for the lovely side dish round up. That’s where I am seriously challenged. Second, I have an idea. Since you are a family of two (plus adorable doggies) and I am a family of two, I was wondering why your recipes are for six? If you did them for two, couldn’t people easily triple the recipe for six servings? Or double for four etc.? Just a thought.
    Thirdly, I am pretty sure I’m not the only one interested in your wedding/wedding preps. You share a bit of personal stuff on the blog and I respect you if you need your privacy but it sure would be nice…….

      Laura, I like to share recipes that serve about 4-6 as I primarily focus on quick and easy family meals rather than meals for two. As for the wedding, we actually did not have one. We eloped! 🙂

        Very smart choice. I hate the money that is wasted on these new giant weddings that are all the rage now. How much better is it to spend the 20 to 50 thousand dollars on the down payment of a house or to pay off a student loan? I say elope and throw a casual party for your closest friends and family when you return. And, of course, your party would have fabulous food!
