Why This Recipe Works

Apple Snickerdoodle Cookies are the perfect way to use up apples. An apple a day, keeps the doctor away, right?! It’s a line that runs through my head when I’m excited about fall and apples.

And at what point do I rename this website to reflect my obsession with all things apple? Actually, this might be my last apple-related post for a while.

There are too many other recipes that need to be made, eaten and shared. Plus, can you believe Thanksgiving is coming up so quickly?

What recipes would you like to see on here before then? Mashed potatoes? Pecan Pie Bars? Creamy Crockpot Corn? Check out my list of suggestions below!

Recipe Ingredients

Apples – Use mediumbaking apples such ashoneycrisp, gala, golden delicious, jonagold or granny smith. Be sure to pat the grated apples dry before adding them to the batter in order to avoid a wet, gooey cookie.

Cream of tartar – Don’t skip using cream of tartar in these cookies. It will help leaven your cookies and give it a good chewy texture. Cream of tartar can last in your cupboard a long time as long as its covered tight and away from the light.

Keep Apples From Browning

When chopping and peeling the apples, fill a large bowl about half with cool water and squeeze the juice of 1/2 lemon into it. The lemon juice will keep your apples from getting brown while you get them prepped for the recipe.

Use an apple corer/peeler if you have one because they will make this process go super fast. If you don’t have one, use a potato peeler and a knife to get the job done.

You’ll need to peel, core and chop the apples. Place them into the water-lemon juice mixture as you work.

Best Apples For Baking

I recommend using a variety of apples and at the very least, use two kinds: one sweet and one tart. My favorite combo is Granny Smith and Honeycrisp apples.

  • Golden Delicious

FAQ About Snickerdoodles

What makes a snickerdoodle a snickerdoodle?

A snickerdoodle is a basic sugar cookie that is rolled in cinnamon and sugar before being baked. It’s also unique that it uses cream of tartar to help leaven the cookie.

Cream of tartar has two purposes in your snickerdoodle recipe. It should help activate your baking soda and it can also add tanginess and chew to a cookie.

Why are my snickerdoodle cookies flat?

If your cookies are coming out of the oven looking flat, you either haven’t used the appropriate leavening agents (baking powder or baking soda) or you have used too little flour. If the cookies are flat and greasy, you may have used too much butter. Follow baking recipes very closely to avoid making flat cookies!

How do I keep my cookies soft?

For optimal cookie softness, allow them to cool completely after coming out of the oven and store as stated in the directions. Some cookies store best in the fridge while others store well while covered at room temperature.

FAQs

Why did my snickerdoodle cookies not flatten? ›

If you reduce the amount of butter or oil in a recipe, your cookies won't spread as much. If you add too much flour, your cookies won't spread as much. If your cookies have more brown sugar than white sugar, they won't spread as much. It's a careful balance.

Why do my snickerdoodle cookies get hard? ›

Snickerdoodles might turn out hard if they are overbaked or if the dough is too dry. Be sure to keep an eye on them as they bake – when the edges are set but the centers are still soft and puffy, they are done.

Why didn't my snickerdoodles crack? ›

Cracking occurs from several chemical reactions during the baking process. If some of your cookies aren't cracking, it could be because those dough balls were less round than others, the dough became too warm, your oven isn't heating evenly, or (most likely) the cinnamon sugar coating wasn't applied as thoroughly.

How do you make cookies thick and not flat? ›

Chill Your Cookie Dough

Chilling your cookie dough for at least 24 hours or up to 72 hours does magical things to your cookies. Think of this like a “marinating” period. Not only will the flavors intensify, but the texture will also improve, so your cookies will bake up nice and thick and chewy.

What is the secret ingredient to keep cookies soft? ›

If you enjoy your cookies soft and chewy, chances are likely the recipe contains a common ingredient that serves a very specific purpose. No, it's not granulated sugar, nor the butter. It's not the egg, all-purpose flour, or even the vanilla extract. The simple, yet oh-so-necessary component is cornstarch.

How do you fix snickerdoodle dough? ›

There are a few things you can do to fix dry and crumbly cookie dough. There are a few things you can do to add liquid to your cookie dough if it is too dry and crumbly. One option is to add milk, water, or another liquid until the dough is the right consistency. You can also try adding melted butter or shortening.

How do you thicken snickerdoodle cookie dough? ›

Soft – Dough that's “soft” or “runny” can be thickened by adding one or two tablespoons of flour to your mix. This will help keep your batch from “Spreading” and coming out of the oven looking like flat, not-so-cookie-like puddles.

Why does snickerdoodle dough need to be refrigerated? ›

Refrigerating snickerdoodle dough lets the butter resolidify and prevents the cookies from flattening out in the oven. I recommend giving the dough at least 45-60 minutes of chilling time in the fridge before baking.

Why are my snickerdoodles spreading so much? ›

Excess Sugar and Fat

Measuring is key in baking. If your cookie contains excess sugar or fat, it will spread while baking.

Is snickerdoodle cookie dough supposed to be sticky? ›

The snickerdoodle dough can be sticky and tough to handle. I like to grease my hands with cooking spray so they are easier to handle. Refrigerate. Also, after you have rolled one tray of snickerdoodles, place it in the refrigerator for a few minutes.

What is the secret to thick cookies? ›

A low proportion of sugar relative to flour reduces spread, keeping the cookies thick. A high proportion of mix-ins helps thicken the dough. Blending chocolate chip styles creates a more dynamic flavor. Overnight refrigeration hydrates the flour, again helping the cookies stay thick.

Should I use baking soda or baking powder in cookies? ›

Baking soda is typically used for chewy cookies, while baking powder is generally used for light and airy cookies. Since baking powder is comprised of a number of ingredients (baking soda, cream of tartar, cornstarch, etc.), using it instead of pure baking soda will affect the taste of your cookies.

Why do my snickerdoodles come out puffy? ›

Inaccurate oven temperature (too hot) - I advise using an oven thermometer for accurate baking results. Tweaked recipe - if you alter the recipe or any ingredients, please keep in mind that the texture and taste will change. Using baking powder instead of cream of tartar, for example, leads to a puffy texture.

How do I make my cookies flatter? ›

Make sure all of your ingredients are room temp. For flatter cookies, scoop your room temp cookie dough to parchment and then press the top slightly. You can always add more butter but that will result in a crunchier/lacy edge.

How do you make cookies flatten more? ›

Cookie baking temperature and time

Higher temperatures promote faster spread, while lower temperatures result in slower spread. Additionally, longer baking times can encourage more spread. Experiment with different temperatures and baking times to find the perfect balance for achieving your desired cookie.

Why are my cookies puffy and not flat? ›

Q: Why are my cookies so puffy and cakey? Whipping too much air into the dough. That fluffy texture you want in a cake results from beating a lot of air into the room temperature butter and sugar, and it does the same for cookies. So don't overdo it when you're creaming together the butter and sugar.
