One of the most popular dishes to make on a Blackstone Griddle is restaurant-style fried rice. I can see why – the Blackstone is the only way I’ve ever even come CLOSE to producing take-out results on this dish that’s notoriously difficult to make well without the power of a wok and commercial propane burner.

Why is a Blackstone Griddle perfect for making fried rice?

Fried rice requires high, constant heat in order to cook properly and achieve that toasty, flavorful finish that is so customary and synonymous with authentic fried rice.

This is nearly impossible to accomplish on an electric stove at home, even with a nice wok and good intentions. It is semi-doable with a gas stove, but you have to work in really small batches or the pan won’t stay hot enough, even on high heat.

The Blackstone’s surface is made of cold-rolled steel, which is much different than a traditional wok, but the same end result is achieved because of its non-stick surface and ability to get (and stay) blazing hot.

In other words, you can try this in a cast iron on your stove but you’ll likely wind up pretty disappointed.

Basic Fried Rice Ingredients

Fried rice is a very versatile dish, but the basic ingredients are all the same. That is what makes it so great for at-home family meals. You get to customize it JUST the way you like it!

I’ve even done multiple different kinds of fried rice in an evening before, according to preferences or allergy needs. It is super fast, super easy, and the best part is 6/7 kids LOVE it. (And the one who doesn’t, doesn’t really count. She hates EVERYTHING besides spaghetti, sushi, and ham sandwiches at the moment.)

Choose your own adventure with:

  • Cooked, chilled white rice
    Basmati and Jasmine are my go-to’s, but you can get creative here and use other types if you’d like! Try mixing in some cooked wild rice, for variety.
  • Vegetables
    We typically stick with the frozen peas and diced carrots but get creative. Peapods, sprouts, broccoli, bok choi, onions, diced zucchini or yellow squash, and pretty much any other vegetable you’d find in a stir-fry would work here. Some people do a “clean out the fridge” fried rice with all of their leftover meat and vegetables from the week!
  • Meat (optional)
    We always do some sort of meat in our fried rice, especially when it is our main dish for the meal, but that’s obviously optional.
  • Seasonings
    Our go-to fried rice seasonings are salt and pepper, soy sauce, and sesame oil. That’s really all you need. If you want to get crazy, mix in some togarashi or midnight toker (it is a rub, I promise, though it will blow your mind), or some furikake.

Tips for perfect fried rice

Once you have the basics down, fried rice is one of the easiest meals you’ll ever make. But don’t skip the basics!

  • YES – you really have to chill the rice.
    It matters. A lot. Can you make fried rice with fresh hot rice in a pinch? Of course, but it won’t be nearly as good as it would’ve been if you had used cold rice.
  • PREP (like your meal depends on it)
    This is not a dish that you can leave on the griddle to run in and grab something you forgot. So make sure you are fully prepped and ready to cook and eat before you put anything on your griddle.
  • Don’t skimp on the oil
    It is “fried” rice, after all. 😉
  • Stagger the cook
    Keep in mind that different ingredients take different amounts of time to cook. You don’t want mushy vegetables and you don’t want overcooked meat either. Don’t be afraid to keep one side of your griddle’s burners OFF if you aren’t making a giant batch, so you have a spot to stash stuff that is done before it all gets mixed together.

Duck Fried Rice Recipe

Yield: 8 servings

Duck Fried Rice is just like take-out, but made at home on your gas griddle! The Blackstone will give you that teppanyaki-style fried rice you love, without even leaving your house.

Prep Time15 minutes

Ingredients

  • 4 tablespoons canola oil, divided
  • 1 small onion, diced
  • 1 teaspoon minced garlic
  • 2 duck breasts, diced
  • 1 cup frozen peas and carrots
  • 3 cups cooked Jasmine rice, chilled
  • 2 eggs, lightly beaten
  • 1/8 cup soy sauce
  • 1 teaspoon sesame oil
  • salt and pepper

Instructions

  1. Preheat your griddle to medium-high or high heat (basically you just don't want to light the oil on fire), and place about a tablespoon of oil down.
  2. Dump on the onions, frozen peas, and carrots and stir fry until heated through and the edges get a little crispy.
  3. Add in the duck breast and cook for 2-3 minutes.
  4. Move the duck breast and the vegetables over to the side of the griddle that is NOT a hot spot (if your griddle has multiple heat zones, turn one down). If you need to, remove it from the griddle to a pan. Ideally, you want it to stay warm but not continue to cook.
  5. Put down some more oil on the griddle and let it heat up. Add on the cold rice and break it apart with your spatula. Continue moving it around the griddle, evenly coating it with oil and letting it get toasty. Add in the garlic during the last minute of cooking. (Add more oil as needed throughout the process.)
  6. Combine the duck breast, vegetables, and rice together and stir and toss until they are evenly combined. Drizzle the soy sauce and sesame oil on top and continue to stir and cook until it is evenly distributed.
  7. Make a hole in the middle of the rice and add a little more oil. Crack the eggs inside, stir with the spatula, and toss to combine with the rice.

  • 3 cups cooked basmati rice, chilled
  • 4 eggs, lightly beaten
  • 1/4 cup soy sauce
  • 1 teaspoon sesame oil
  • salt and pepper
  • cilantro
  • green onion

Instructions

  1. Preheat your griddle to medium-high or high heat (basically you just don't want to light the oil on fire), and place about a tablespoon of oil down.
  2. Dump on the pineapple, vegetables, and ham on one side of the griddle and stir fry for about 2 minutes.
  3. On the other side of the griddle, put down some more oil and let it heat up. Add the cold rice and break it apart with your spatula. Continue moving it around the griddle, evenly coating with oil and letting it get toasty. Add more oil as needed.
  4. Combine the meat, vegetables, and rice together and stir and toss until they are evenly combined.
  5. Make a hole in the middle of the rice and add a little more oil. Crack the eggs inside, stir with the spatula, and toss to combine with the rice.
  6. Drizzle the soy sauce and sesame oil on top and continue to stir and cook until it is evenly distributed.

  • 2 cups of mixed peas and carrots
  • 1/4 cup finely diced onion
  • 2 cups cubed chicken breast or thigh
  • 6 cups cold jasmine rice
  • 4 tablespoons soy sauce
  • 2 large eggs
  • 1 teaspoon MSG (optional)

Instructions

  1. Preheat your gas griddle over high heat. Let it really get hot. 10-15 minutes is usually necessary to make sure it is fully preheated.
  2. Put 1 tablespoon of oil and a few shakes of sesame oil on the griddle. Stir fry peas, carrots, onion, and chicken until hot and the chicken is no longer pink. Move to the side of the griddle to keep warm. If you have the ability, reduce the temperature on that side of the griddle to medium.
  3. Put another tablespoon of oil down and several more shakes of sesame oil. Stir fry cold rice over high heat for 3-4 minutes. Stir in chicken and vegetables.
  4. Add soy sauce to taste and stir well. Scoot rice over to one side of griddle and quickly cook the scrambled eggs. Gently mix eggs into rice mixture.
  5. Sprinkle the whole thing with MSG and stir, if you are using it.
  6. Serve hot.

Notes

You can skip the MSG if you'd rather and still have a delicious bowl of fried rice, but that restaurant-style flavor has a lot to do with the MSG, so take that into account.
