Today I’m sharing some of my favorite easy quesadilla recipes! Whether you like them cheesy, filled with beef or chicken or even vegan, there’s a delicious quesadilla filling for everyone here.

All of the quesadillas below are super easy and you can make most, except for one, in about 10-15 minutes on the stove! You can also easily make them on the grill during summer.

Step 1: Prepare the filling.

I always make sure to make a filling that has a binding component and is “stable”. Be it cream cheese, or tomato paste or even mashed beans, many times I like to mash many of the ingredients together. You don’t need to always do this, but when you have ingredients like chopped vegetables or beans, I highly recommend it. Filling your tortillas this way will help keep the quesadilla together when you’re flipping it to toast on each side.

Step 2. Spread the filling on one half of the tortilla.

Step 4. Toast on both sides

…until golden brown. I always like to add a little bit of oil or fat to the pan when toasting sandwiches or quesadillas (even though it’s nonstick). This makes the tortilla crispier and prevents burning.

Step 5. Serve

Serve with your favorite dipping sauce or some avocado for a healthier option.


Quesadilla Filling Ingredients

There are many options when it comes to quesadilla fillings! It basically depends on what you’re going for and what you have at home:

  • Cooked meat or fish like leftover chicken, ground beef or even canned tuna
  • Cooked vegetables or vegetables with low water content. You do not want to use too many fresh vegetables and juicy ingredients, as your quesadillas can get mushy.
  • Legumes like cooked chickpeas, black beans or even lentils
  • Spices and fresh herbs
  • Cheese – I love experimenting with different types of cheeses (surprise they all work – even feta and gorgonzola as you’re about to see!)
  • Sauces like sriracha, cream cheese, hummus or even tomato paste

Ingredients

  • 1 cup shredded chicken
  • 2 Tbsp cream cheese
  • 1 1/2 tbsp tomato paste
  • 3 garlic cloves, minced
  • 1/3 tsp cumin
  • 1/3 tsp coriander
  • 1/2 tsp crushed red pepper
  • 1 jalapeno, chopped
  • 1/2 cup chopped arugula
  • handful basil leaves or some chopped dill
  • 1/2 cup shredded cheese
  • 2 flour tortillas

Instructions

  1. In a small bowl mix the cream cheese, garlic, tomato paste, cumin, coriander and crushed red pepper, a tsp of water until smooth.
  2. Add the chicken, basil (or dill), chopped jalapeno and the arugula to the mix.
  3. Spread 1/2 of the mixture on one half of a flour tortilla and top with cheese of your choice - mine was mozzarella. Repeat for the other tortilla.
  4. Fold each tortilla in half and toast in a non-stick pan with olive oil until golden brown. Flip and toast on the other side as well.
  5. Slice in 3-4 pieces and serve like this, or with guacamole.
